Sometimes, I like to watch the grease run scared without even introducing it to my little friend called water....

Hoods are 95% of my business. Did not even begin flat work until I had many of my clients asking about it, so bought a hot water washer, with more pressure. Started to use the hot water for hoods...what a dream. You have to realize I started out like my father still does it...by hand-chemical guy. I decided I did not want to work that hard so moved on to bigger and better equipment. Some day I promise I will get my "old school" father to change his ways.

Hoods are 1/3 of my business, ducts are another 1/3 of my business, and fans are the other 1/3 of my business.

OH...yes of course. I don't just do hoods. The vent shafts and fans go with the hood. All or none.
I'm sure we have all seen new business where the fan was never removed...leaving the shaft and the underside of the fan untouched for many years. How guys get away with not doing the job properly I will never know. "Hood guys", "Greasers", "Fat Blasters", no matter what you would call yourself...we all make great $ for the amount of physical labor actually put into it. Just don't see why some decide not to do the WHOLE job.

I think this guy is one of those "hood only" cleaners. In all fairness he did give the fan a once over and the vert could have been much worse.

Yep, looks like one of those guys. He must not be using a short wand to get up in there on the top screen slot either. Only spaying from where the cook stands only gets out what the cook can see. I suppose some are happy with that...that is fine. More guys out there who don't hold them selves up to a greater standerd just means more opportunities for me. I am glad to point out to GM's or owners...how thier system works and what I will do for them.
